It is better to have one strong project that shows focused skills (real option prediction with ML, good Python/C++, market data, SQL) instead of ten small common projects.

The people who made it put in a huge amount of work. Do the advanced math, read Bloomberg, learn about firms, and keep improving.

Do not only learn how something works, learn why it works. Explain the math clearly. Also, do not slack on arithmetic, mental math, and DSA. These are important in interviews to test problem solving and fast thinking.
